Training programme Blue Marble Training was set up by Shoreditch Trust to manage the traineeships of aspiring eco-chefs and front of house management at Acorn House Restaurant and the Waterhouse Restaurant and the Trust's Eco Conference Centre.
The Blue Marble Training programme provides a ground breaking opportunity for trainees to work in the industry while being comprehensively trained in-house by experienced professionals. The training provided allows students to achieve an NVQ Level 2.
In addition to their schedule within the restaurant, trainees participate in a number of additional activities, from fieldtrips and specialist placements to focussed lectures and seminars, all designed to give them the broader awareness of what an eco-aware chef requires to lead a team.
Blue Marble also works in partnership with other service providers including local schools, social services and the wider voluntary sector. The work targets young people from a range of backgrounds to build an awareness and aspiration around food and careers in food. Blue Marble Training devise, deliver and manage a range of bespoke interactive events demonstrating the oportunities to use food as a vehicle for social change.
